A lovely way to spend an evening in Vegas doesn't have to be elaborate. Try a stroll through the shops of Palazzo, admire the decor, people watch, and enjoy some of the best gelato around. My favorite is hazelnut and chocolate.

Quinoa Tabbuleh Salad with Avocado

No need to go to the Mediterranean restaurant anymore to get my favorite salad. I can make it at home. <3 <3 <3

Ingredients:

1-2 bunches of parsley
several leaves of mint
2 green onions
2-3 roma tomatoes
1 medium cucumber
1/2 cup quinoa
1 medium avocado - optional
1/4 cup lemon juice
3 Tbsp olive oil
salt & pepper


Instructions:

The easiest way to make quinoa is via rice cooker. Place 1/2 cup quinoa into rice cooker along with 1.5 cups water. While waiting for the quinoa, prepare the rest of the salad. Gather the parsley into a tight bunch and slice very thinly. Do the same thing with mint. Cut the green onions into very thin slices as well. Cut the tomato and cucumber into very small cubes. (start by cutting into slices - then turn the slices into stick-pieces - and then finally into little cubes.) If you are adding avocado - cut the avocado into tiny cubes as well. Add lemon juice and olive oil. Add salt and a bit of pepper. Mix well. Enjoy with pita bread!
